Gouttebroze grew up in Angoulême. He was a journalist with the local newspaper "Charente Libre" before studying voice. His tenor career started at the Marseille opera theater, then he sang at La Monnaie in Brussels from 1956 to 1959: Hoffmann, Faust, Rodolfo, Toinet (Le chemineau by Leroux), Pinkerton, Nadir, Duca, Cavaradossi, Werther, Alfredo, Roméo, Pluton (Orphée aux enfers) and Canio.

In 1959, he was hired by both the Paris Opéra and the Opéra-Comique; at the Opéra, he sang just one year (Italienischer Sänger, Duca, Faust and Don José), whereas at the Opéra-Comique, he remained a house tenor until 1972.

Between 1970 and 1990, he was active in organizing opera seasons in Angoulême.
